Being a college student, roommates come and go. This constant out an influx of new people is practically a hot bed for encountering new things. Now, vegetarianism is not a life style choice that I've ever practiced, but a particular roommate of mine currently (whom this sandwich is dedicated to) is currently on a meat-less diet. To live a life without hamburger seems to me to be a fruitless (lol) one, but I suppose I shouldn't be one to judge. In any case, I created this breakfast sandwich with Abby in mind. Hopefully you'll enjoy it too.
Ingredients:
1 Yellow/Orange Bell Pepper
8 eggs (two for each sandwich)
4 plain bagels
4 slices cheddar (most block cheeses will work here)
1 tbsp butter
1 tbsp vegetable oil
Salt
Peppa
Prep:
- Toast the bagels. Yum yum. You want them to be brown, but not charred.
- Cut out the center of the bell pepper and wash out seeds.
- Cut bell pepper width wise to make roughly half inch thick "rings".
Directions:
Place two medium sized pans over medium heat. Melt butter in one pan, and heat up oil in another. Crack eggs into a bowl and mix thoroughly until yolk is blended. Pour half of the eggs into the pan with the butter and let them sit. Top with salt and pepper to taste. We don't want to scramble our eggs. Place 4 of the bell pepper rings into the pan with the oil. After letting the eggs cook untouched for about 3-4 minutes on one side, flip it over to the other and let it cook again, keeping an eye on our bell peppers. The peppers should have a nice golden color to them before you flip, though keep in mind they take some time longer to cook than the eggs.
Remove the eggs when cooked through, and they should come out to be a near perfect circle if you didn't disturb them too early when flipping the first time. If you did, pretend like you meant to do it. Divide the eggs up into fourths, layering them with the slice of cheese in between. The still hot egg will melt the cheese. (Do the same thing that you did with the first half of eggs to the second)
When the peppers are finished, remove them from heat and place on top of the egg. From top to bottom, the sandwich should look like this: bagel top, bell pepper, egg, cheese, egg, bagel bottom.
Serve with a tall glass of orange juice. (Abby's favorite)
