Oven-Baked Corn on the Cob with Lime/Chili Butter

Ingredients:
6 corn on the cob, unhusked
1 stick butter (room temp)
Chili Powder (2 tsp or more to taste)
1 Lime

Directions:
Lay unhusked corn on a baking and bake at 350 degrees F for 30-40 minutes.

While the corn is in the oven, combine the butter and chili powder in a small bowl and mix thoroughly until incorporated. Zest the lime over the bowl and mix again.

When removing the corn from the oven, be wary because the corn will be hot! You should see plenty of steam when peeling down the husk, and the kernels will look plump and juicy.

Delicious.

  1. We tried this, and it was really good; definitely adds a zing to the corn and is a welcome change from the same-old, same-old butter and salt. It didn't obliterate my taste buds or anything. I think I'll mention this one to grandma and grandpa.
